500g rhubarb – two big sticks. Chop into chunks no bigger than 5cm, stuff into mason jar. Pour in gin to cover. Throw in 50g sugar. Seal and put in cupboard. Shake once a day for three weeks. At three weeks, strain and bottle. It has been pronounced Very Good by partner, who is now drinking it with elderflower tonic. Success.
